BBQ RIBS - the EASY WAY!!!

I don't know about you...
...I must be an Idiot!!!
took me years to learn to make the best RIBS ever!!!!
I went over and tried more recipes for bbq ribs than I care to remember...
...cook, marinate, do this, don't do that... the advise was good , I am sure...
but it did not 'produce' the kind of ribs you can eat until you explode!!! :)))
...well finally, last year..
I got the hang of it!!!
I got THE BEST marks from people not shy to say what they think!...

OK...
here it is!
Buy a Baby Back Ribs (I use fresh or defrosted)...it really does not matter..
...usually 7-10 bones in each slab.
salt (Coarse Kosher Salt)
coarse ground black pepper (don't be affraid of pepper!!) ;)
(place salted and peppered ribs in a ziploc bag in a fridge for about 2 hours before grilling)

be mindfull of children...they have much more sensative taste and something "just right' for you is way too spicy for them!!! For my 4-year-old Grandson I actually make one piece with less salt and pepper (left overs make the most awesome sandwich the next day!!!)
anyhow...

calculate about 2 hours for grilling ...
I do preheat my gas grill...with a charcoal I wait until the charcoal is 3/4 done...
you want low heat..place the ribs bone down on a upper rack (for gas grill), close the lid and let it be...
...for 90 minutes...
... avoid the urge to lift the lid...move 'em..fiddle with them...check 'em...
...trust me !!!
after 90 minutes open the lid...brush your favorite bbq sauce and let it gril on medium heat for 15 minutes turning it couple of times.

OK...got it?! :)
I must tell you...there is no way I will promise you it will be perfect the first time...
...you need to "feel" your grill and most likely will not be happy the first time around..
but the try is WELL worth it!!!

... a side note:
I would make red skin potatoes cut in wedges (any potatoes will do)...grilled at the same time ..
on a side or lower rack...
...potatoes..
I cut them into somewhat double-orange size sections...toss them with couple of tablespoons of olive oil, salt, teaspoon of red paprika and tablespoon of rosemary (crushed)
as a side dish...any vegetable (love grilled red onion)...any salad is good..
check in the next few days for my salad ideas!!
