Meatloaf on a budget

Meatloaf on a budget...
Combine:
1lb ground beef
1lb ground turkey (you can use chicken, pork...I usually use whatever I get cheaper at the store)
1 medium onion (finely chopped)
1/2 red pepper (finely chopped)
cup of celery (f/c)
few white mushrooms (f/c)
1/2 cup oats (you can use breadcrumbs)
1/4 cup ketchup (you can use tomato sauce)
1 egg
salt, pepper, oregano, thyme, garlic powder (about 1/2 teaspoon each)
combine together but do not overmix
form a french bread type loaf in a ovenproof deep dish.

Bake in preheated oven (350) for about an hour.
after 45 minutes brush with BBQ sauce, or ketchup...
let rest for 10 minutes or so before slicing .



I have a reputation at home for cooking with everything what does not get away from me :))
If you missing some of the ingrediens don't worry...

substitute or add...don't have oats...don't have breadcrumbs?..

add a slice of bread thorn to pieces...

don't have fresh onion? add dried chopped onion...you don't have to add any veggies what-so-ever...the same with spices...salt you kind of need but everything else is an option.

Experiment!!



This meatloaf should not cost you more than $6-8 dollars and will be somewhat 4-6 adult servings (1.50-2.00 per serving)

with little mashed potatoes and corn from a can (frozen or fresh ear) as a side veggie you are looking at some restaurant a dinner worth around 9 dollars...

living in Michigan nowdays all you hear is the economy and hardship people are in...everywhere for that matter...but in Michigan it seem everything and everybody somehow is associated with Auto Industry...

I thought I will post a meatloaf recipe...
